Lemon olive oil cake

Total duration: 75min (including 40min baking time)


baking tray 30cm long, or a round baking tray diameter 24cm

4x organic eggs

200gr sugar

2x organic whole middle sized lemons

150ml LAI organic olive oil

300gr organic white flour

a pinch of salt

1.5x tsp baking powder

0.5x tsp soda


Step 1: Preparing your ingredients

  1. Mix the flour with the baking soda and a pinch of salt

  2. Measure your olive oil

  3. Measure the sugar

  4. Cut the lemons and put them in a blender

Step 2 : Mixing

Place the sugar in a large bowl with the eggs and start mixing until you get a dense consistency. Then, gradually add LAI olive oil, then the crushed lemons and finally add the flour.

Step 3

Place mixture in the baking tray and bake at 180 degrees for 40min.
